Add tahini, lemon juice, garlic, salt and cumin to a small bowl.
Slowly add cold water, one tablespoon at a time, stirring well until the sauce becomes silky and smooth. Keep going until it’s as thick or pourable as you like.
Taste and adjust—more lemon for tang, or more water for a more runny consistency.
Use as a dip for falafel, drizzle over Hawawshi, roasted veggies, or grain bowls or spread inside wraps or sandwiches!
