Cube firm tofu into around 1 inch chunks
In a bowl mix 3 tablespoons (half) of soy sauce, sesame oil, smoked paprika, salt and lemon juice.
Mix cubes of tofu in mixture well.
Cover and marinate for around 30mins.
After marinating slide each tofu piece onto a small skewer. Repeat until you have about 5-6 pieces of tofu on each skewer
Add the cornstarch to a plate. Take each skewer and lightly roll through the cornstarch. You may need to sprinkle the cornstarch over the tofu pieces lightly with your fingers.
Add oil to pan and heat over medium heat a few mins. When oil is hot, add each skewer to pan. Flip each skewer after around 5 minutes.
When each skewer is cooked and golden/brown on outside, transfer to a plate or cooling rack.
Add chopped spring onions and garlic to same pan (may need to add extra oil). Fry spring onions and garlic until golden and softened.
Add soy sauce, maple syrup and ginger paste. Add lemon juice.
Stir frequently, bringing to a simmer for a few minutes then remove from heat. The sauce will begin to thicken
Dip a brush into the sauce and brush the outside of the tofu skewers to completely cover the edges.
Sprinkle sesame seeds on all of the skewers.
Optional- sprinkle finely chopped red chillis and chopped fresh coriander.
