If you’re looking for a dairy-free alternative to milk that’s rich, creamy, and full of flavour, you have to try this Creamy Nut Milk! This milk is seriously a dream come true! It is surprisingly easy to make and tastes so much better than store-bought oat or nut milk.

Why Make Your Own Nut Milk?
Making nut milk at home gives you control over the ingredients, ensuring that it’s free from added sugars, preservatives, and artificial flavourings that are often found in store-bought versions. Plus, you can adjust the texture, sweetness, and flavour to suit your personal preferences. It is more cost-effective than buying pre-packaged oat and nut milk, and if you’re like me you use a lot of plant-based milk on cereals and in many recipes! This variation of the creamy nut milk recipe uses oats, macadamia nuts, and dates for a deliciously rich, smooth, and naturally sweetened milk. One key piece of equipment you will need for this recipe is a high speed blender like a ‘Nutribullet’ that is able to blends nuts well.
Ingredients
Oats- Oats are naturally creamy when blended, which adds a smooth and velvety texture to the nut milk. They also help thicken the milk, giving it a hearty and satisfying feel. I use rolled oats but quick oats could also work well.
Macadamia nuts– Macadamia nuts are known for their high-fat content, which makes them exceptionally creamy when blended. They provide a smooth, rich texture, making the milk wonderfully thick, and have a buttery, sweet flavour.
Cashew nuts– Cashews are also incredibly creamy and are a fantastic addition to nut milk for creating a rich, velvety texture. There is no need to pre-soak them for this recipe, but you can do if you have time.
Vanilla essence- Vanilla adds a warm, sweet, and aromatic note to the nut milk, giving it a comforting and familiar flavour. It pairs wonderfully with the natural sweetness from the dates, as well as the creamy richness of cashews or macadamia nuts.
Dates- Dates are naturally sweet and will provide a rich, caramel-like sweetness to the nut milk without the need for refined sugar or syrups. I use 1 date per 1 ½ cups water for sweetness. A teaspoon of maple syrup could also work as an alternative. However, if I am using the milk for a savoury dish like creamy pasta I normally omit the date or other sweetener.
Salt- A pinch of salt helps balance and elevate the sweetness of the nut milk, especially when you use naturally sweet ingredients like dates. It can also help round out the nutty flavors, making the milk taste more well-rounded and rich.
Feel free to mix different nuts for a unique flavour profile- almonds and hazelnuts are another great option to add in your nut milk!
How to Adjust the Recipe with These Ingredients:
For a thicker milk: If you prefer a thicker, creamier texture, you can use a bit more oats or macadamia nuts, or even reduce the amount of water in the recipe.
For a sweeter milk: The dates add plenty of sweetness, but if you prefer an extra touch of sweetness, you can add a little maple syrup or agave nectar. Start with 1-2 dates, and adjust to your taste.
