Hummus, a staple food in middle eastern homes and restaurants, is a creamy, velvety experience that can completely change your snack game! Hummus is an essential part of middle eastern cuisine and is perfect for dipping with bread or as a side dish. This recipe is the smoothest, creamiest hummus you will try!

There are few things more comforting and satisfying than a big bowl of creamy, silky hummus. It has been one of my favourite ‘accidentally vegan’ food for years. If ever I am in a Lebanese restaurant I will be sure to order it along with other delicious vegan dishes such as falafel and muhammara (check out my muhammara and smashed potatoes recipe here!). Whether you’re enjoying it as a snack, spreading it on sandwiches, or serving it as part of a mezze platter, hummus is the ultimate plant-based dip that everyone can enjoy. If you’ve ever tried making hummus at home and ended up with something a little more ‘gritty’ than smooth, you’re not alone. But trust me—this recipe is going to give you the most perfectly creamy, velvety, dreamy hummus! Once you make it, you’ll never look at store-bought hummus the same way again. 🥄
Ingredients
- 🧆 Chickpeas- Chickpeas are the base of hummus and provide that signature creamy texture. Using canned chickpeas is the quickest route, but if you’re using dried chickpeas, make sure they’re well-cooked and soft for the smoothest result. To get the silkiest hummus, the trick is to peel the skin off the chickpeas. Yes, it takes a little longer, but it makes such a difference. Just pinch the skins between your fingers and they’ll pop right off. This step is optional but recommended for next-level smoothness.
- 🌿 Tahini– Tahini (pure sesame seed paste) is what gives hummus its creamy, rich texture and slightly nutty flavour. Stir your tahini well before using it, as the oil can separate. The better the tahini, the creamier the hummus will be, so try to use a high-quality, smooth tahini. You can find it in most middle-eastern supermarkets.
- 🍋 Lemon Juice– Lemon juice balances the richness of the tahini and olive oil. Freshly squeezed lemon juice is always best. If you like your hummus extra tangy, feel free to add more lemon juice.
- 🧄 Garlic– Garlic adds that extra punch of flavour and depth.
- 🫒 Olive Oil– High-quality extra virgin olive oil is key in hummus for a smooth, rich texture and that Mediterranean flavour. Make sure to drizzle a little more olive oil on top before serving for a beautiful finish.
- 🧊 Ice Cubes- I read online that ice cubes are the key to creating smooth, airy hummus and for some reason it works! Start by adding around 3 ice cubes and add 1-2 more as needed.
- 🌶️ Paprika– You can garnish your hummus with smoked paprika as I did. Dip a wet fork in the paprika to decorate the hummus for a beautiful, authentic look (see video)! Sumac is also an alternative to paprika.
- 🌿 Fresh Parsley– Chopped parsley adds freshness and colour, making the hummus look vibrant and appetising.
- 🌰 Pine Nuts– Pine nuts add a lovely crunch and nutty flavour that complements the creamy hummus. They’re a common garnish in Lebanese hummus.

Ingredients
- 1 can chickpeas Keep a few aside for serving
- ⅓ cup tahini
- 2 tablespoon extra virgin olive oil
- Juice of 2 large lemons
- 1 teaspoon salt
- 3-4 Ice cubes
- 2 cloves garlic
- Paprika, Fresh chopped parsley, Pine nuts Optional- To serve
Instructions
- If you’re using canned chickpeas, drain and rinse them. Then add them to a bowl with extra water. Peel the skins off as many chickpeas as you can by simply pinching each chickpea between your fingers and removing the skin.
- In a food processor or high-speed blender, combine the chickpeas, tahini, garlic, olive oil, salt, lemon juice and 3 ice cubes. Scrape down the sides of the blender to ensure all ingredients are incorporated.
- Add 1-2 more ice cubes if needed ( be careful not to overdo it as the hummus will become too runny). Keep blending until it reaches a light, creamy consistency.
- Taste your hummus and adjust the seasoning as needed. You may want to add a bit more salt or lemon juice.
- Transfer the hummus to a bowl. Drizzle with a little extra olive oil, and a spoonful of chickpeas if you kept some aside. Dip a wet fork in paprika and then dip in hummus for authentic decoration. Add pine nuts and top off with fresh parsley. Enjoy with some pita bread!
