Ingredients
- Large tablespoon of olive oil
- 1 white or red onion, finely diced
- 3-4 cloves garlic, minced
- 1 medium red bell pepper diced
- 4 fresh tomatoes, pureed in blender
- ‘Fable’ Slow Braised Mushrooms (whole packet), minced in food processor
- 1 teaspoon chilli flakes
- 1 teaspoon Salt
- 1 large tablespoon Tomato paste
- Shredded Melting Vegan Cheese of choice- as much as you like!
- 4-6 flour tortillas
- Parsley to serve
- Avocado/ guacamole on side (optional)
Instructions
- Heat oil in pan over a medium heat
- Add chopped onions and minced garlic. Sauté for a few minutes until softened and slightly caramelised, around 5mins.
- Add chopped red pepper and stir. Cook until slightly (around 5 minutes).
- Add pureed fresh tomatoes, stir and cook around 5-10 minutes until reddened in colour.
- Add ‘Fable’ Slow Braised Mushrooms, dried chilli flakes, salt and tomato paste. Stir. Cook a further 5 mins.
- Heat a tablespoon of olive oil in pan. Place 1 flour tortilla in pan. Fill with some of the prepared filling, vegan cheese and fresh coriander.
- Let the quesadilla cook until golden on one side, around 2 minutes. Flip and cook other side in same way. Transfer to plate when done.
- Repeat with the remaining tortillas wraps and filling.
- Slice into triangle pieces and serve with guacamole (optional).
